Morton Tender Quick is a fast-acting meat curing mix. It gives meats a savory cured flavor and a characteristic pink color. It works particularly well with small cuts of meat, such as pork chops, pork ribs, and poultry. It contains salt, the primary preservative; sugar; both sodium nitrate and sodium nitrite, curing agents that also contribute to color and flavor development; and propylene glycol to keep the mix uniform.
